Lemon and Honey is a great combination for desserts this Honey Lemon Panna Cotta is subtle yet has an explosion of flavor as you savor it.
You must have already known how crazy I am for desserts. I like everything Italian – food, culture, wine, desserts, coffee, shoes, bags, men! Panna Cotta the classic Italian dessert is one of my favorites because of its richness and subtleness. I can never resist a good panna cotta. Panna Cotta in Italian means cooked cream. The basic panna cotta can be as simple as a combination of milk, cream, sugar set with gelatin. And there are innumerable flavor combinations you can come up with both classic and contemporary. I had this honey and lemon panna cotta at an AAnglo-Indian restaurant in Bangalore called Bow Barracks, which sadly has closed down now. But I had it in my mind that I need to recreate it. And what better time to do it than the A to Z challenge! I am doing more no bake dessert recipes in this challenge than the baked goodies so that every can try out, even who are not fond of baking and ovens.
Personally, I like desserts which are rich and subtle. Panna Cotta fits the bill perfectly for me. It is extremely easy to make and is decadent. You can be very indulgent and use full cream or use combinations of half and half or low-fat cream while milk. I am using a combination of full cream and whole milk for this honey lemon panna cotta recipe. It makes the dessert creamier and gives a wonderful taste.
How to make honey lemon panna cotta?
In a heavy bottom saucepan heat whole milk and cream on low flame. We don’t want to boil this because that might split the cream. Add in sugar, honey and gelatin in this mix and cook over low flame for 2-3 minutes.
Pro Tip: Make sure you are stirring it often with a whisk, otherwise gelatin will form into ugly clumps.
Take it off flame and let it cool for a few minutes before transferring in dessert cups or bowls. I thought the wine glass would be great for it! Pop it in the refrigerator for 5-6 hours or till it is set. Mind you refrigerator, not freezer.
How to make the Honey Lemon Topping for honey lemon panna cotta?
Once the base is set we can go ahead and make the top layer of honey and lemon. In a bowl soak gelatin in warm water and let it bloom for 5 minutes.
In a saucepan heat water and lemon juice. Add honey to this mix and whisk well. Add the gelatin mix to it and whisk well till there are no lumps in the mix. Cool it for 2 minutes and pour over the set panna cotta. Refrigerate for 2 hours or till the jelly top layer is set.
Keep it out of the refrigerator for 15-20 minutes before you serve. This is a good make-ahead dessert recipe. Next time when you have a party at home, make the panna cotta a day ahead and keep it ready. You will have one less item on your list!
Now wasn’t that easy? You could do this in individual bowls, or even molds. I love to use martini glasses for my panna cottas sometimes. Eat directly no need to de-mold!

I think there are something missing in the topping ingredients : quantity of water to add in lemon juice? and quantity of honey?
