This Marble Cake with Chocolate makes its super moist and super yum than the regular cakes with cocoa powder. White Chocolate and Dark Chocolate makes it delicious. Included an eggless recipe too.
Hello beautiful people. It was my son’s 14 month birthday this 28th and I decided to make this Marble Cake with chocolate for him. Yes you can officially call us crazy that we celebrate every month. I do it because it’s an excuse to bake and try out new recipes, and I am spoiling him. It’s okay to spoil your kid when they are little. Disciplined life can wait till he’s three or may be four!!
You already know, I started this month by announcing the #BakingWithTina baking challenge for #MyFriendAlexa. It was a one month challenge with an aim to improve the Alexa Rank with loads of blogging and reading, commenting and sharing. You can check about my plan and strategy for the challenge here.
Now that it’s 30th Sep I would present my #MyFriendAlexa Report Card. It has a comparison of the stats of Day 1 and Day 30. Overall I am pretty happy to have grown my rank by 44%. The only thing that I tried yet couldn’t manage was growing the email subscription. I have to try out something else for that. So blog subscriber number from 4 to 6 is way too low. I hope you will hear me pleading you to join my blog now, and be kind and join it finally. I won’t spam you, for sure! Promise okay?
Now let’s get back to our cake. I love the marble cakes because they look so rustic yet they are so pretty. There is some beauty in the rustic simple cake.
What is a Marble Cake?
What is a marble cake, did you ask? It’s simple cake with a dark and light batter which has a marbled pattern. It’s just how you make the marbles pretty, nothing too difficult.
Now if you are conversant with baking and you pin or Instagram desserts you will also see a lot of Zebra Cakes. Zebra Cakes have this same batter and instead of marbling they have this distinct stripped patter. I might do a Zebra Cake sometime in the next month (which starts in half an hour) and share it here.
With Real Chocolate
In most marble cake recipe that you will get on the internet you will find the use of cocoa powder. I go a little deep in indulgence all the time. Food is to celebrate, and I find cooking/baking therapeutic. So I decided to chuck the cocoa powder and go ahead with real chocolate. So the dark butter has dark compound chocolate and the white batter has white chocolate. Believe me, this way the cake is super-duper yum. It is super moist, super buttery and super yum.
Do you want this Eggless?
In case you wanted to make this without the eggs just replace the eggs with 1 ripened banana for each egg. I am using 4 eggs for this recipe, so you can replace them with 4 medium sized ripened bananas. That way you will have a banana chocolate marble cake. I would also add a teaspoon of baking soda in that case.
What do you do in a marble cake?
Prepare the cake batter by beating 4 eggs and sugar with a hand mixer or in a stand mixer. Yes its eggs and sugar and not butter and sugar.
Add a teaspoon of vanilla extract, a pinch of salt (I always use a pinch of salt in all my cake batters) and a teaspoon of baking powder. Beat them well till there’s loads of air in the eggs and they almost double in volume and you can form thick ribbons of this mix.
I have used melted butter for this recipe, since I wanted the egg to fluff up first. At this point I ditched the hand mixer and went ahead with a spatula. Mix the melted butter well. Add in flour and mix with the spatula.
Now the real thing begins. Pour half of this batter in a separate bowl. Melt white and dark chocolate in separate bowls. You can melt them in a double boiler (melting on a bowl placed over a pot of hot water) or you can melt in the microwave. I microwaved for 40-45 secs for each bowl.
Pour the white chocolate in one of the bowls with the batter and the dark one in the other. Mix them well with a spatula/spoon. So now you have a white cake batter and a dark brown cake batter.
Baking
I wanted to use this star shaped cake tin for this month’s birthday. I had bought it some time back but never used it. You can bake in any shape or just put it ina round cake tin or even a loaf tin.
Grease the cake tin and place a baking sheet / parchment paper inside the pan. If you are using one of those silicon baking molds then skip this step. I always bake with a paper liner because it’s easier to unmold. Specially follow this step if you are baking in a particular shape. You don’t want an edge to stick to your pan and break while you are trying to de-mold!
Pour the white batter first in a thin layer and reserve some for a top layer. Pour the entire content of the chocolate batter on top of the first layer. Now pour the remaining white batter to finish the top layer of the marble cake. With a knife make swirls on the batter. Remember to lift the knife up every now and then so that the dark part of the swirls comes on top. You will understand that once you start doing this process.
Place the cake tin on the middle shelf of a pre-heated oven at 180C/350F for 40-45 minutes or till it passes the toothpick test.
Let it cool down before you try to unmold. When you are going to cut it, you will see the nice dark chocolaty and white swirls.
I cooled it for about 5 minutes because the birthday boy was creating a lot of nuisance in the kitchen and I wanted to get over the photos till the daylight was still there.
Here is my little man enjoying his star marble cake.
He actually had most of the cake over one and half days. Yes I am spoiling him, It’s okay!
- Sugar – 1/2 cup
- Eggs – 4 whole eggs
- Vanilla extract – 1 teaspoon
- Pinch of salt
- Baking powder – 1 teaspoon
- Unsalted butter – 8 tablespoons
- Flour – 1 cup
- Dark chocolate – 100 gms
- White chocolate – 100 gms
- Pre-heat oven to 180C/350F
- Grease a star shaped cake tin with butter or cooking spray
- Place a parchment paper or baking paper
- In a mixing bowl place sugar
- Break eggs one by one and start beating sugar and egg well with a hand mixer
- Keep beating till the eggs have doubled in volume and you can form thick ribbons
- Add vanilla, baking powder and salt and mix
- Add melted butter and mix with a spatula
- Fold in the flour gradually until everything is combined
- Divide batter in two bowls in equal quantities
- Melt chocolate in microwave
- Pour white chocolate in one bowl and dark in the other to make two kinds of batter
- In the greased and lined tin pour half the white batter
- Next our all of the dark batter
- Next pour the rest of the white batter and cover the dark batter completely
- Make swirls in the white layer with a knife
- Place the tin in the middle tray of the oven
- Bake at 180C/350F for 40-45 mins or till it passes the tooth pick test
- Cool the cake once baked
