These whole wheat oatmeal cookies are healthy, crispy and baked to golden perfection. They are completely egg less and have no refined flour. Learn how to make whole wheat oatmeal digestive biscuits.

I have been getting a lot of requests for eggless baking. I generally prefer baking with egg – because it gives a rich taste. But there are many ways you can substitute egg with other vegan ingredients. I’ll probably make an infographic with the quantities some time later and share. These cookies however, are super healthy and super easy to bake. They don’t have any refined flour so you will have all the goodness of whole wheat and oats. They are ready under 45 minutes from start to finish including the resting time for the dough. If you want to learn how to make whole wheat oatmeal cookies, or what we generally call in India digestive biscuits this is probably the easiest recipe you can get. These are very similar to the Graham Crackers that you get in the US.

You already know I am going crazy with oats and trying out varieties currently. I made this yogurt and oatmeal pancakes for breakfast today which turned out pretty nice. I love pancakes for breakfast – they are hearty and keeps you full for a long time.

Its gluten free, sugar free, has no butter – so it’s super duper healthy.

I was running late this morning. After my bub’s up there’s no way I can do anything else. All my time is for him. But I had to make a quick yet healthy breakfast for myself. Thus came the Xpress Sandwich.

INGREDIENTS
 
 
  1. Multigrain Bread – 2 slices
  2. Egg – 1
  3. Salt & Pepper – to taste
  4. Milk – 2 teaspoon
 
 
INSTRUCTIONS
 
 
  • Break an egg, add seasoning, milk and mix
  • In a griller put bread slices one over the other
  • Pour the egg mix in a skillet to make an omelet
  • Once omelet is done put it in between the toasts
  • Drizzle some Ketchup and gorge on it!
 
 
TIPS
 
If you have time – put just about anything in your omelet.

I am going bonkers over Oats these days. Made these Ultra Healthy Oats and Banana cookies the other day and they turned out super yum.

 
 They are gluten free, butter free, sugar free – super duper healthy, I say!
 
All the sweetness comes from bananas topped with goodness of walnuts and raisins. And this is really what I call clean eating – no chocolate chip in my cookie and yet they are yumtastic!

I used to hate oats at one time – yeah really hate oats – I felt it tastes like vomit. That was when I was sticking to only making porridge! But when I started experimenting with oats I got to know how good and tasty it can be. And how many wonderful things you can make out to oats!

ULTRA-HEALTHY OATS AND BANANA COOKIES

Gluten free, butter free, sugar free – the ultra healthy oats cookies for you
Ingredients
  • Banana – 2 medium sized ripe bananas
  • Rolled Oats – 1 cup
  • Milk – 1/8 cup
  • Walnut – few chopped
  • Raisin – ¼ cup chopped
  • Cooking spray /little oil for greasing
Instructions
  1. Pre-heat Oven to 350F/ 220C
  2. Mash the bananas in a bowl
  3. Add oats, milk and chopped dried fruits and mix with a spoon
  4. Line the baking tray with a greased baking paper
  5. Spoon out the dough in equal parts on the baking sheet
  6. Flatten the dough with the back of the spoon or fingers – these cookies are not going to rise up.
  7. Bake for 20-25 minutes or till cookies are done!
Notes
You can add any kind of dried fruits – nuts, pecans even dates

Egg Oats Omelette

 
Eggs are staples for breakfasts, aren’t they? Bread and omelette are like brothers. But have you tried an even healthier version of omelette? How about egg and oats omelette? I am currently bitten by the oats bugs and am trying to use oats in different ways.
 
So thought why not make a quick meal altogether in an omelette? This is pretty filling too.

INGREDIENTS
 
Whole Eggs – 2
Red Onion – 1 teaspoon chopped
Tomato – 1 teaspoon chopped
Oats flour – ¼ cup [don’t get worked up, it’s just ground rolled oats]
Dried Oregano – a pinch
Salt & Pepper – to taste
Oil – for greasing frying pan
Cilantro/Coriander leaves – 1 teaspoon chopped
Milk – 1 tablespoon
 
INSTRUCTIONS
 
In a bowl mix – oats flour, salt and pepper, oregano
Break the eggs and whisk with a spoon
Add milk to the egg mix and whisk
Heat a teaspoon of olive oil in a frying pan and spread evenly
Pour the egg mix and spread evenly
Cover and cook for few seconds on low heat
Remove lid and sprinkle chopped vegetables on the omelette and cook for 2 minutes.
Flip the omelette and let the other side cook for 2 minutes on low heat.
Serve hot with tea or coffee!
 
TIPS
 
If you are greasing with a pastry brush, it will take very little oil
You can use any vegetable you like – mushroom, corn, bell peppers and even olives go well.
This is going to be the easiest thing you have flipped in a pan ever, because oats makes a good base

Banana Muffin

Muffins can make me happy any time – little cups of joy. Last time I had shared a Blackberry Muffin recipe which I made with blackberry preserves. Last Sunday I was again in mood for muffins so thought of using up some fresh bananas. I also added some nuts for the extra crunch.
Banana muffins are really easy and very light. You can have it as dessert or even during breakfast.
What you will need

All-purpose flour – 1 n 3/4th cup (230g)
Granulated sugar – 3/4th cup (150g)
Nuts, finely chopped – 1 cup (you can use walnuts, almonds or cashew – I have used almonds here)
Baking powder – 1 teas spoon
Salt – 1/4th tea spoon
Cinnamon powder – 1 tea spoon (I make it fresh – gives that beautiful aroma)
Eggs – 2 (lightly beaten)
Unsalted butter – ½ cup (100g)
Ripe Banana – 2
Let’s get started

Pre heat oven to 180 degrees C (350F) and line a muffin tray with muffin cups/liners
Lightly toast the chopped nuts in a dry pan and set aside.
The preparation is very easy. You need two separate mixing bowls for the dry ingredients & wet ingredients and then just mix.
Combine flour, nuts, baking powder, sugar, & cinnamon powder in a mixing bowl and mix them lightly
In another bowl mash up the bananas with a fork and add the beaten eggs
Add melted butter to this wet mix
Now lightly fold the wet ingredients with the dry ingredients.
Take care that you are not beating it very hard you just need to fold it till all the dry ingredients are combined and becomes a chunky batter. No need to make it smooth like a sponge cake batter.
Now scoop the batter in the muffin cups and bake them at 180 degrees C for 20 – 25 mins.
Rest them on a rack once you take them out from the oven.
That’s it – the banana muffins are done.
Enjoy.
Tip: Insert a toothpick to check, if it comes out clean you are good to go.
