Mexican Corn Salad is so simple that you won’t even realize you had made one! It can be enjoyed as a side, as a main with some Tortila or even your regular toast. You can fill in your tacos or just have it as a relish!

Mexican Corn Salad is so simple that you won’t even realize you had made one! It can be enjoyed as a side, as a main with some Tortila or even your regular toast.
Ingredients
  • Frozen Sweet Corn – 1 cup
  • Extra Virgin Olive Oil – 2 tablespoon
  • Garlic – 2 cloves, minced
  • Red Tomato – 1 seeded and chopped
  • Red Onion – ½ chopped
  • Red or Green Bell Peppers – ½ chopped
  • Red Wine Vinegar – 3 tablespoon
  • Salt & Pepper –to taste
  • Dried Oregano – 1 teaspoon
  • Fresh Lime Juice – 2 tablespoon
  • Jalapeno/Tabasco Sauce – 1 teaspoon (optional)
  • Green chili – 1 chopped
  • Fresh Mint – 2-3 leaves chopped
Instructions
  1. Thaw the corn well
  2. Put all the ingredients in a mixing bowl and toss well
  3. Season with salt and pepper
  4. Drizzle little olive oil and serve
 
Notes
You can put this on top of your baked fish and see the explosion of flavours in your mouth!

This is something I eat frequently in the summer (we are in a corn growing area in the United States)but I have never had it with mint. We have mint in our garden – when it comes up later in the spring I will try adding some. Thanks for the suggestion!

Oh!!Absolutely mouth-watering that looks! So fresh! Will regular vinegar or apple cider do instead of the red-wine? Yummy and easy too!

Mexican corn salad is actually so easy to prepare. All the ingredients are easily available and I just love corn. It is healthy too.
