WATERMELON SALAD
Salalds are great for the summer, aren’t they? What about a refreshing cold salad?
I was thinking of making yet another summer cooler today because it’s summer and hot. But then I had a change of mind because my almost 9 month old was sleeping. I didn’t want to wake him up with the roaring blender! Instead I made this gorgeous Watermelon Salad with cucumber and feta cheese.
It’s sweet, it’s crunchy, it’s cold – in all it is simply an awesome salad. The hint of salt from the feta cheese and the beautiful honey and lime dressing adds all the necessary zing.
I am sure you will like this combination this summer! It is so soothing for the eyes!
WATERMELON SALAD

An easy refreshing salad – perfect for the summer. It’s bright, it’s beautiful and its crunchy.
Ingredients
Watermelon – ½ a melon, peeled, de-seeded and diced
Cucumber – 1 peeled and diced
Feta Cheese – ¼ cup crumbled
Pepper – to taste
Honey – 1 tablespoon
Lemon juice – 2 tablespoon
Coriander Leaves – ½ teaspoon chopped
Instructions
In a mixing bowl place diced watermelon and cucumber
Mix honey, lemon, pepper in a small bowl and drizzle over the watermelon
Sprinkle crumbled feta and coriander leaves on top and mix
Serve as it is
Notes
This salad is great for an evening snack[br]This one doesn’t require any accompaniment

I don't care for watermelon, but my husband does, so last summer I made a version of this. The feta goes really well with the sweeter ingredients. So healthy and fresh. And yes, I picked around the watermelon.
I would enjoy this. My husband will not mix fruit with salad (except, occasionally, dried cranberries, and only if served to him like that). Strange, as watermelon and cucumbers are related. The salty feta would be a great addition, balancing the sweetness of the watermelon.
Hi Tina. Landed on your website and jumped straight to the salads section since I could see mainly non vegan stuff on the home page. And as I hoped to find something vegan I was surprised by this recipe, it’s simplicity and uniqueness bowled me over. Another reason I picked salad section is because I am going 40% raw, so the next time I make a salad it will be this one, I will just be replacing the cheese with tofu or eliminating it completely. Could you give me few of your expert insights which will help me veganize this. Thanks 🙂

Watermelon with feta cheese!! Now that's something I have never tried before. You know some awesome salad recipes.
